Taboulleh with Garraí Mara Greens

This salad is a great dish to have alongside some good hummus from Mezze Tramore, Ardkeen stores etc, Kalamata olive mix, Garraí Mara salad mix and Mezze flat bread.  We really enjoyed this dish and hope you will too.

Ingredients: (Serves 4 people)

1 cup of Bulgar Wheat

1 ½ cups of boiling water

1 veg stock cube

Diced courgette x 1

100g of Green beans chopped in half and blanched

50g of purple broccoli chopped and blanched

1 Cucumber diced

Handful of halved Baby tomatoes

Spring onions x 2 chopped

Handful of chopped flat leaf parsley

Handful of chopped coriander

1 lime zest and juiced

Finely diced red onion x 1

½ Pomegranate

Salt & Pepper to taste

Method

Place bulgar wheat and finely diced courgette in a large bowl,

In a separate jug add an organic vegetable stock cube to boiling water and stir until combined, pour the mix over the bulgar wheat and cover with a plate for 15 minutes without stirring.

Blanch the green beans and purple broccoli in a pan of boiling water for a few minutes, strain and leave in a separate bowl to cool.

Chop and dice the rest of the ingredients on a chopping board

Once the bulgar wheat has soaked all the water and softened, add the rest of the ingredients in the bowl, add a squeeze of one and its zest , pomegranate beads and juice to the mix, salt and pepper to taste and serve with a garnish of parsley and coriander

This dish can be enjoyed as a salad dish with beetroot and carrot salad, potato salad mix, hummus, olives, flat breads etc or also as a side dish with your summer barbeque.
