Garraí Mara Green beans and Potato Salad


500g of Garraí Mara potatoes (leftovers from sunday roast and boil more if needed)

Leftover pork from Roast (optional)

150g green beans

12 pitted black olives Kalamata preferably

A handful of capers

4 tbsp of organic olive oil

1bsp of red wine vinegar

Salt and pepper to taste

A handful of chopped fresh flat leaf parsley


Blanch the green beans for a few minutes in boiling water

Refresh under cold water

Place potatoes, green beans, capers,olives and parsley in a serving bowl

Mix the dressing ingredients together and season well

Pour the dressing over the salad and toss well to mix


Serve and enjoy
