Beetroot and Carrot Salad


This salad is a lovely addition to a summer evening meal as a side salad to compliment a dish or to have as a main dish with a lovely fresh green side salad and some lovely sour dough bread.  The recipe below can be made with a substitute veg instead of beetroot such as blanched and cooled purple broccoli heads, shredded white cabbage or boiled and cooled new potatoes, alternatively it can be just carrot salad.

Ingredients (4 people)

  • 3 medium sized Beetroot grated finely raw
  • 4-5 medium sized carrots grated finely raw
  • 1 clove of fresh garlic crushed
  • 2 tablespoons of toasted pumpkin seeds, sunflower seeds
  • 2 tablespoons of roughly chopped walnuts, leave a few whole for garnish
  • 2-3 tablespoons of olive oil
  • 5-2 tablespoon of toasted sesame oil
  • 1 teaspoon of cumin seed
  • Salt & Pepper to taste
  • A generous handful of fresh coriander chopped and some leaves for garnish
  • A squeeze of half a lemon (alternatively freshly squeezed orange juice and fresh orange segments to garnish)


Place a dry pan on high heat, add cumin seeds and toast for 40-60 seconds tossing the seeds in the pan throughout to avoid burning.   Remove from the heat once toasted and allow a few minutes to cool in a separate bowl

In a large serving bowl add the grated beetroot, carrot, toasted pumpkin and sunflowers seeds, crushed walnuts, chopped coriander.

For the dressing;   Mix the olive oil, sesame oil, crushed garlic, lemon juice, salt and pepper to the cooled cumin seeds in the bowl. Taste it as you go and add more of anything according to what you prefer.  We don’t use exact measurements every time, just taste and change it up according to preference.

When ready to serve pour the dressing over the salad and mix well, Garnish with another squeeze of fresh lemon juice, coriander leaves and a few walnuts.
