Garraí Mara Roast Veg with Spiced turnip puree
Ingredients (2-4 people)
- 1 medium Turnip diced
- ½ carton of Oaty Cream
- 2 chopped shallots
- 1 tbsp oil
- 1 tsp Cumin seeds
- ½ tsp dried chilli flakes
- 2 cloves crushed garlic
- 6 Potatoes chopped
- 2 Beetroot quartered
- 2 large onions quartered
- 4 cloves of garlic
- 100g kale chopped
- Green beans cut in half
- Squeeze of lemon juice
- Olive oil
- Handful fresh parsley to garnish
- Salt & pepper to taste
Method
- In a baking tray add olive oil and heat in an oven at 180degrees
- Add Potato, beetroot, onions, garlic, and cover with the heated olive oil, return to the oven for 30 minutes
- Place the diced turnip in a pan of water bring to the boil and then simmer for 20 minutes until soft
- Heat oil on the pan, Add cumin seeds, chilli flakes, onion, and garlic fry for 1-2 minutes until softened
- Strain the turnip of water and then add to the above mix of onion,cuminand garlic etc, mash until pureed, add the oaty cream and stir through on a medium heat, salt& pepper to taste.
- Check the roast veg and see if potatoes, beetroot are softening, add green beans to the mix for five minutes
- Meanwhile place the chopped kale in a bowl, add a squeeze of a lemon and olive oil, salt & pepper, massage all into the kale leaves
- Finally place the kale on top of the roasted veg dish and return to the oven for a further 5-7 minutes until the kale starts to crisp
- Serve roast Veg with the pureed spicy turnip and a garnish of parsley
