Garraí Mara stir fried Fresh veg with egg fried rice

Ingredients: (Serves 4 people)

  • 150g of courgettes
  • 100g purple broccoli
  • 1 small head of Romanesco cauiliflower
  • 2 medium sized potatoes
  • ½ teaspoon of dried red chillies
  • 2 tbsp olive oil
  • 2 cloves Garlic
  • Thumbnail of grated fresh ginger
  • 1 Medium onion
  • 2-3 chopped spring onions
  • A few tomatoes
  • 50g Green beans
  • A few leaves of cavelo nero kale chopped
  • 2 tablespoons of peanut rayu
  • 1 tablespoon of soya sauce
  • Fresh basil for garnish
  • Basmati rice for 4 people
  • 2 fresh local eggs
  • Fresh parsley chopped
  • Salt and pepper to taste
  • Fresh lime squeeze when serving and chopped peanuts (optional)


  •  Wash the basmati rice and cook according to volume used-generally one cup of rice to 2 cups of water add a pinch of salt
  • once cooked drain any water and leave until the veg is nearly ready to cook with egg
  • Heat oil in a large saucepan
  • Add dried chillies, onion, garlic, grated ginger. Sweat for a few minutes
  • Add par boiled chopped potatoes, cook for another few minutes
  • Add florets of Romanesco cauliflower,  purple broccoli
  • Add green beans and chopped courgettes
  • cook for 5-7 minutes on medium heat stirring occasionally
  • Add tomatoes, soya sauce, and pepper-simmer gently
  • Add peanut rayu and stir through the mix gently covering all veg with the sauce, leave on low heat until the rice is ready to serve , continue stirring occasionally
  • Whisk eggs add them on a pan at medium heat with a little oil, add the basmati rice and stir through slowly as the egg cooks, add fresh parsley salt and pepper
  • Garnish the veg with freshly chopped basil and a squeeze of fresh lime juice chopped peanuts, serve with egg fried basmati rice
