New Potato Salad

New potato, boiled egg, with a wild rocket leafy green salad and sweet balsamic dressing

  • Salads come in all shapes, colours, tastes and sizes…This salad is one I am especially fond of when the new potatoes are ready.  It is a taste and treat that tells me summer has arrived!  I first tried this tasty salad prepared by the lovely Jim Cronin while I was learning all things organic farming from him in East Clare in 2018. 

We spent most Tuesdays in East Clare working in a field situated 5 or 6 miles from the main farm.  These Tuesdays were particularly memorable from my time in Clare for various reasons. One of the first Tuesdays on a cold day in March, I had an ‘aha’ moment while we were flinging old farm yard manure out the sides of a tractor/trailer feeding the ground before planting. I said to Jim, ‘’I think I have made it as a farmer’’ in that moment, a big smile across my face. 


I had another moment mid-summer on a hot June day when I was working the horses for the first time with Jim.  He was leading Qualitae and I was walking behind her guiding the hoe trying to keep step in time with her pace.   I remember feeling overwhelmed with a sense of happiness, it was really special.  I turned to Jim at the time and stated it was my favourite moment on the farm to date, smiling ear to ear again. 


One of the fondest memories of our time in Garraunboy field with the crew was on our morning breaks, sitting on up turned veg crates under a lovely old ash tree, drinking tea made using a Kelly kettle and eating fresh delicious pan au chocolat pastries Jim brought from the local French café after his early morning deliveries to Killaloe.  The view and surroundings were superb, the miraculous abundance of beautiful rows of veg and flowers in the field, absorbing the lovely energy of the beautiful surrounding hills of East Clare.   These moments usually involved having the laughs and enjoying great conversations with the crew, It was on one of these sunny days in early June we had this salad with new potatoes for the first time…Good times.  


Ingredients (2-4 people)

  • 500g Washed, boiled and halved new potatoes
  • 4 Boiled eggs, shelled and halved
  • 100g Wild Rocket (washed and drained)
  • 150g Salad Mix (washed and drained)
  • Fresh parsley chopped and for garnish
  • 2-3 Spring onions, chopped (optional)
  • Green Beans, raw (optional)

For the Dressing

  • 2-3 tablespoons Organic Olive Oil
  • 1-2 tablespoons Good Balsamic Oil
  • ½ teaspoon of local honey
  • ½ teaspoon of english mustard
  • Squeeze of lemon Juice
  • 1 clove crushed garlic, grate a thumbnail size of ginger,
  • Salt & pepper to taste


  • Mix salad, rocket and fresh parsley in a large bowl
  • Add spring onions, green beans and mix (Optional)
  • Mix olive oil, lemon juice, mustard, honey, balsamic vinegar, garlic , ginger and add salt and pepper to taste
  • Mix ¾ of the dressing into the leaves making sure all leaves are covered with the dressing
  • Add the new potatoes and eggs , layering throughout the leaves, gently  pour over the rest of the dressing
  • Fresh Parsley to garnish
