Pumpkin Risotto with white wine and homemade tomato sauce

Ingredients (2-4 people)

  • 600g Risotto Rice
  • 500g chopped cherry tomatoes
  • 1 small uchi kuri or similar pumpkin chopped into small pieces
  • 1 medium onion
  • 1 tbsp oil
  • 1 tsp dried red chillies
  • 2 cloves crushed garlic
  • 1 tsp Dried oregano
  • 200mls of water
  • 200mls of white wine
  • 100g of parmesan cheese grated
  • Handful fresh parsley to garnish
  • Salt & pepper to taste



  • Heat oil on the pan
  • Add chilli flakes, onionand garlic fry for 1-2 minutes until softened
  • Add chopped pumpkin pieces
  • Add chopped cherry tomatoes and bring to the simmer
  • Add balsamic vinegar and simmer for a few minutes
  • Add dried oregano to the mix
  • Add risotto rice and stir into mixture covering all the rice with the sauce
  • Slowly add water and white wine until absorbed by the rice, this can take 15-17 minutes on a medium heat
  • Stir in the parmesan cheese until melted through
  • Serve risotto with a garnish of parsley and enjoy
