Pumpkin Risotto with white wine and homemade tomato sauce
Ingredients (2-4 people)
- 600g Risotto Rice
- 500g chopped cherry tomatoes
- 1 small uchi kuri or similar pumpkin chopped into small pieces
- 1 medium onion
- 1 tbsp oil
- 1 tsp dried red chillies
- 2 cloves crushed garlic
- 1 tsp Dried oregano
- 200mls of water
- 200mls of white wine
- 100g of parmesan cheese grated
- Handful fresh parsley to garnish
- Salt & pepper to taste
Method
- Heat oil on the pan
- Add chilli flakes, onionand garlic fry for 1-2 minutes until softened
- Add chopped pumpkin pieces
- Add chopped cherry tomatoes and bring to the simmer
- Add balsamic vinegar and simmer for a few minutes
- Add dried oregano to the mix
- Add risotto rice and stir into mixture covering all the rice with the sauce
- Slowly add water and white wine until absorbed by the rice, this can take 15-17 minutes on a medium heat
- Stir in the parmesan cheese until melted through
- Serve risotto with a garnish of parsley and enjoy
